I suppose given how a Twinkle Eye has that protective gem shell prevents the eye balls from drying out seeing as how it would be hard to close them.

I always went by the comic explanation, myself!

I've always imagined them having divine vision. I imagined galaxy specifically as this celestial seer who watches the goings-on of the universe.

As for what their vision looks like? My first thought was one of those bug-eye toy things, which you hold up to your eye and see multiple images through it.
They probably have some kind of special magical vision too, like seeing the future, or spirits, or other dimensions or something like that.
You also see a lot of rainbows when you look through a prism/crystal, so there's that too!

Also, I reckon they could pop their gem eyes out and use them to look round corners. And shoot lasers!
