Title: The Cooking Challenge - Week 6 - Ingredient You Disliked as a Child

Week 1 - Casseroles
This one is going to be pretty broad. Any sort of casserole you like, as long as it's something you've never made before! The next challenge will be posted a week from now, so try to get your dish complete by that time if possible. Let the brainstorming begin!

Week 2 - Garlic
This week we'll all be using the same ingredient - garlic! Just how many ways can you incorporate garlic into a dish? We shall see...

Week 3 - One Pot Wonder
Get your spoons out; this week it's all about soup! (Just make sure it's a recipe/soup you've never made before!

Week 4 - Something Stuffed
This week you'll be stuffing something more than just your stocking! Any food type is permissible, just make sure that *something* is getting stuffed.

Week 5 - Seasonal Squash
Use summer or winter squash (depending on what season it is in your part of the world) to make a main course or side dish.

Week 6 - Ingredient You Disliked as a Child
That's right, pick an ingredient you disliked as a child (you might even still dislike it) and find a way to prepare it so that you actually enjoy it!

I've been so unmotivated with cooking lately (not to mention relying far too much on Trader Joe's) so I was thinking of starting a little challenge to get myself and others inspired to dabble in cooking and perhaps get out of our comfort zones!

Each week I'd come up with a different theme and participants would have the ability to make any recipe that fell within the requirements. For example, we might have one week devoted to a dessert containing a certain common major ingredient, the next week totally vegetarian or vegan main courses, the next week a dish inspired by a particular continent/country, etc. There would of course be exceptions for dietary restrictions.

My vision is a 12 week challenge to start with. We can continue if it's a success. Participants would not be required to do every challenge, but it would be good to have at least a few regulars. Any newcomers could join at any time. Once you complete your dish, you could post a photo or link to the recipe and we can discuss...what we learned, what he liked/didn't like, what we would do differently, etc.

This actually sounds really fun. I take turns cooking with my family and it is always hard to think of things to do here. Maybe this could get me to enjoy cooking again.

Yes, the goal is to enjoy!

I can definitely whip something up to share once a week!

Plus it will perhaps open our eyes up to new ways of preparing a timeless favorite. For example, let's say the week's theme is squash. I might only be familiar with a handful of ways to cook squash, so seeing how others prepare it as well as trying a new recipe of my own would help me to expand my squash knowledge. Yes, I just said squash knowledge. I'm in trouble...

I like this idea!  I've been wanting to cook more and eat out less, so I'd definitely be interested.  ^.^ I always find recipes I want to try and I never actually do it.  Maybe this'll be my chance!

Lol if only I didn't set fire to all food items! I've actually managed to set three fires in one day, and I'm the reason we have more than one fire extinguisher in the house. :blush:

Sounds like a fun idea though for the more cooking inclined. :lol:

Could be particularly interesting if you pick things that could be used in sweet or savoury dishes such as sweet potato. Or even a herb or spice. This would mean possibly a really wide variety of dishes on the same theme.

Yeah, I like the idea of mixing things up with challenges with very loose guidelines and others that are a bit more specific. Centering the challenge around a not often used spice is a great idea!

The first challenge has been posted at the top of the thread. I think it's best to just keep everything in one thread instead of starting a new thread for each challenge.

I've never made a casserole aside from lasgana/parmigiana, so this should be interesting. I also don't eat meat, so finding a good recipe that is filling and doesn't involve meat might be a bit tricky!

Are you of Caribbean descent?

Glad this one is shaping up to be a decent challenge! I found this link that breaks down veggie casseroles by type - lasagna, pasta bakes, enchiladas, pies, gratins, and others. It's kind of looking like the broad definition of casserole is any sort of dish that is baked in an oven.

Wikipedia says,"A casserole is a large, deep dish used both in the oven and as a serving vessel. The word is also used for the food cooked and served in such a vessel." I love how much "vessel" comes up! I'm so easily amused.

So off the top of my head here is a run down of what I've made before. Spaghetti Pies are fun and fairly easy especially if you have a spring form pan. Shepard's Pie is a great option if you have left over mashed potatoes and it's very easy to make vegetarian. Just use lentils. On Oh My Veggies, I made the Broccoli Cheddar Brown Rice Casserole two Thanksgivings in a row now.

I think I'm either going to make a pot pie or a gratin.

I decided to try a vegan casserole in order to get away from the standard "starch + dairy + meat" theme that so many casseroles have!  :P

Yummy indeed. I no longer eat meat but I could probably substitute it with something else.

That's OK! I live alone too (and will be eating enchiladas for the next week...). You can always give the leftovers to friends/family/coworkers, or have someone over to share the meal with you.

Thanks. Those enchiladas put me in a coma last night. Here's the recipe I used:

This was the easiest part of the whole meal, I think. The salsa, guac, and rice took up way more time and attention. The one thing I messed up on was adding diced green peppers to the enchilada sauce. Next time!

It looks like we had at least 3 of participate this round. I'll probably wait until tomorrow night to post the next challenge. Hopefully we'll hear from a few more cooks before then!

Yum! I'd never heard of that website before but it looks fabulous. I'll definitely have to use this as a resource for future challenges. Although the search function doesn't seem to work for me. Does it work for you?

I just checked it out and the search function worked. :/ Not sure what's up with the site. If you like I can send you a pile of vegetarian focused cooking blogs that I use all the time. My husband was vegetarian for several years and when he jumped back on the meat wagon we decided to do like two meat meals a week for a happy in-between.

Here is the link to the recipe. I forgot that I only had two ramekins not four so I put it in a casserole dish.

Sure, feel free to post the links. I'll admit that I'm completely overwhelmed by too many options and so Oh My Veggies should keep me satisfied for a while. hehe. (I gotta pick up some seitan...never heard of it until now!)

Yay, glad you're enjoying it. I think the goal is to get out of our comfort zones and learn new recipes that we can incorporate into our meal rotation list, not to mention learn new techniques and ways of preparing food, or preparing food we aren't familiar with at all.

I've got a list of potential challenges for round 2....trying to decide which to choose!

Was it as yummy as it looks?

Yes it was pretty amazing.  I must admit I've done it a few times now so it's a standard in my house. Stewing beef, leeks, carrots and garlic cooked for 2 hours in red wine and beef stock.  I got the recipe from James Martin's book on slow cooking.  It's fairly healthy too if you cool the stock and skim the fat off. The final calorie count depends how much red wine you wash it down with of course!

I like the look of your Lancashire too, the potatoes on top look just right!

It's a decent fish, I think. It's my go to fish along with salmon. I'm having trouble deciding on something that contains garlic. Looking for recipes now as I'll have time to go grocery shopping today/tomm

I would say if you don't like garlic you wouldn't like it. It is very "garlicky" but it tastes only as "garlicky" as a dish which is quite "garlicky" in the normal way. The garlic cloves are really quite sweet. I would definitely cook it again. :biggrin:

Interesting. I've never been keen on whole chunks of garlic, but I very well might like your dish...it almost looks caramelized.

I'm thinking of doing a vegetarian chicken soup with seitan.

I have a pretty good recipe for pasta fagioli and red pepper soup if anyone is interested. The latter is super easy, delicious, and only requires four ingredients - broth, small egg bow macaroni, roasted red peppers, and sliced Parmesan cheese.

A bit off topic as this week is soups, but last night I made blackened tilapia to try to rectify my tilapia mishap from last week and it came out amazing. All you do is rub both sides of the fish with a mixture of paprika, cayenne, garlic powder, cumin, salt, and oregano. The recipe called for brown sugar as well but I forget it and it didn't even need it. Coupled with a Mediterranean salad of cous cous, olives, and tomato, it was sublime.

You couldn't really taste the oats, they more just thickened the soup. And on that basis they worked really well  :biggrin:

I also live alone/cook for one, but I take lunches to work, so I'm all about leftovers and freezing portions for later. I freeze stuff in single servings, so I can grab and go for easy lunches! (margarine/sour cream/etc containers work wonderfully for this. And if they get ruined it's no big deal to just toss it!)

This week I tried a new cookie recipe...salted caramel dark chocolate cookies. Everyone loved them. Just incredible. Highly recommended.

I had to look marrow up! I picked up both butternut squash and acorn squash. No idea how to cook either!

ETA: Cooking them looks simple enough. The question is, what else to make with them? It seems more like a veggie side dish. Any ideas for a complimentary main course?

Ooh, very nice! I still haven't cooked my squash. Maybe tomorrow. I haven't even decided on a recipe! Thanks for the curry recipe but I'm missing a few ingredients and want to see what I can make from what I have in the house already. hehe

In one word: UGH!

The butternut squash flatbread was definitely better on day 2 and 3, but overall I just don't care for the taste of it. With the extra squash I attempted a sort of puree/sauce over penne last night which was absolutely horrendous! I had to throw it all out. Winter squash just isn't for me, I guess.

I'll post the next challenge soon. I've been meaning to, sorry! Since it seems to be just you and me at this point I don't think we have to worry about completing the challenges exactly in a week anymore! lol

Just wanted to pop my head in here and say hi! I haven't been following the challenges but I did just try out two Kabocha squash recipes for the first time (because I bought a ginormous one).

First I made this recipe for Soy-Braised Kabocha squash: http://www.saveur.com/article/Recipes/Soy-Braised-Kabocha-Squash

I didn't take pics but it was quite nice. I made it a bit too salty as I had way more squash than recommended and never do well when working outside of a recipe  :blush:

I also made homemade Kabocha gnocchi. I just mixed the mashed, cooked squash with 1 tablespoon of yellow miso paste and enough flour to make a dough. Then I rolled out the dough, cut it into gnocchi sized rectangles and dropped them in to boiling water. They cooked in the water until they floated. I served them with sage, olive oil and pepper. They were the most misshapen pillows of sweet, delicious gnocchi I've ever had! I am definitely buying this squash again and will definitely make the gnocchi again!

In case anyone is curious, Kabocha has a texture similar to potatoes rather than other squashes. It's a bit like sweet potatoes/yams.

Good luck! I never liked bananas as a kid (and still don't). I also hated/hate blueberries, but there's no way I can work with them. Ever! So I'll probably make something with bananas.

Hmm...maybe. My problem with bananas is that I hate soft fruit and bananas tend to be extra soft (not to mention they easily turn brown). I'd love a recipe where they are more of a puree and I don't have to think about biting into soft chunks of it! I'll start looking for recipes....see what my options are.

ETA: love this recipe but I've been trying to lose weight and gain muscle, so probably not the best idea. Looking for something a tad healthier...
