Wind Whistler for sure.  I loved her character in the series, and she is a very beautiful pony.  Fizzy comes in a close second.

It's so hard to pick a favorite!
G1: Flower Bouquet. I love her color combination and she was one of my favorites as a kid. I just love that she is so detailed. And Sugarberry...and Locket...and Dancing Butterflies...this list could get long so I will stop now!
G2: Ivy. Also partial to Moonshadow for some reason.
G3: There's a lot of them I really like, but current favorite is Butter Pop. Just love the symbol.
G4: Favorite character is Fluttershy but of the toys, I actually like regular Sunset Shimmer the most. Also, I could take or leave Lyra in the show but I really like her as a toy. Not sure why!

G4: Rarity! She'd probably be a villain in any other cartoon. I find it refreshing not to see a girly character being vilified.

I don't have one specific favourite, I have a lot of ponies in G1 I love for different reasons. If I listed them all it would be a bit tedious. But, I must put in a special mention for my namesake, Taffeta, even though she is not a UK pony and was not even sold here (except possibly in weird bits in the Princess Pony mashup at the end of the UK line.

I had never even seen a real Princess Taffeta when I chose her name for my online name (out of frustration because all the ponies I loved as a kid had already been taken on the then-canonical Pony Name Registry Ivy ran to avoid community confusion. I chose Taffeta because her colours looked nice. Then I traded for one and that was it. I loved her immediately. I think I must have got mine in the summer of 1998, in trade from the US. I was also in the online pony community from home in 1998 for the first time - so I suppose the two things go together. Taffeta came to live here around the same time (within a few weeks in fact) of my choosing to adopt her name.

So, for a pony I never heard of as a kid, who never existed in the UK and who I never saw even a photo of till after I'd chosen to use her name, I really love Taffeta a whole lot. One day, I will have her MIB. One day. When I'm a lot richer than I am now.

In terms of other generations, I guess probably in G2, I liked Silverswirl quite a lot back when they were out. I also have a fondness for Hip Holly ("Hip Vomit" just because she's memorable).

In terms of G3, the original Kimono. Also Rainbow Dash, the original, because I graduated with her in 2003. I made her a cap and gown to celebrate the occasion! I do still think some of the G3 are stunning, although I don't remember their names well, especially with the later ones. Kimono will always be my favourite, though. She's one of the few I have loose and MIB.

G4 - Rarity because she was inspired by one of my G1 beloved childhood memory ponies, and reminds me of another (Sparkler and Glory). I actually am building an accidental Rarity army at the moment. It really was an accident, but I now have the original Rarity, the one from the carriage with Starswirl, the one with the doll that has rainbow hair, a blind bag rarity and the Rainbow Power second wave Rarity. I can see that I will end up adding more Rarities if I can find them second hand and not expensive as time goes on. 

G1 is my main generation though, so love for those always > the others.

Baby Fifi

Her colours are the same as my favourite football team (ok pink rather than red), I adore dogs, her name is a derivitive of my mums, blue was my dad's favourite colour and I love all things girly. She just seems to capture everything for me.
