You couldn't really taste the oats, they more just thickened the soup. And on that basis they worked really well  :biggrin:

Gotcha. Some of these dishes look really yummy, but some seem like they might be a bit of a chore to make...

Oooo what an interesting challenge! I actually love cooking (or, I love eating!) but haven't had a lot of time or energy for it lately. I also live alone/cook for one, but I take lunches to work, so I'm all about leftovers and freezing portions for later. I freeze stuff in single servings, so I can grab and go for easy lunches! (margarine/sour cream/etc containers work wonderfully for this. And if they get ruined it's no big deal to just toss it!)

I'm going to lurk for a while but may join in on this challenge yet if you keep coming up with ideas!

I made my seitan soup last night. Wasn't too crazy about the seitan to be honest. Next time I might just forgo it. Posting the next challenge momentarily...

I went back and posted my garlic challenge but I owe you a soup and something stuffed! I have been so busy I ate cup-a-soup today but not going to post about that!  :blush:

I had my brother over on Christmas Day and I made ricotta stuffed shells with mushroom sauce. It was quite good. I have an entire tray leftover!

I went with ricotta and pesto stuffed tomatoes with pasta in tomato. Was extremely quick and simple but very tasty. Would make this again.  :biggrin:

Nice! And very Christmas-y colors too!

That reminds me, I have a great recipe for stuffed peppers....you stuff them with cous cous instead of the more traditional rice and beef.

Very nice! It's always a good feeling when guests devour a new dish.

This week I tried a new cookie recipe...salted caramel dark chocolate cookies. Everyone loved them. Just incredible. Highly recommended.
