It shouldn't "pill" like fleece can, but some of the minky I've used tends to.... I don't know, "clump?" If handled too much. Like, the individual fibers bunch together into little clumps, is all I can describe it as. Usually the longer nap types. It doesn't lay absolutely flat anymore but is still soft. Send me a pic and let's see if that's what's happened! I remember the minky in your Flitterheart, while definitely being some sort of minky, isn't the minky I use normally. My usual supplier didn't have a color that matched her closely enough. Minky is just polyester but there are dozens of types and lengths and suppliers. I'd have to find my receipt, but I think your girl's fabric is "Mar Bella," or something, which isn't a material I'd ever used before. I am making a Luna plush with a type of minky I had also never used before (again, different supplier), and her neck has gotten "clumped" where I handled it roughly while sewing down her head.
