What sort of gifts would you like to recieve from a penpal?

Stationary. She's your penpal after all. Some neat stationary from another country sounds fun. And it seems like it should be different from the stationary she'll find where she lives.

Definitely things that a local to you that she can't get where she is. I always liked getting coins and currency, that was always interesting to me. You don't have to go out of your way to find local trinkets either, some of the stuff that might be most interesting to her may be things you take for granted every day.

Definitely agrees with the whole stuff that's available/local to your country that she wouldn't normally be able to find in her country thing.

Back in the '90s I had dozens of pen pals all over the world! I had a Japanese pen pal that would send Sailor Moon things that she found.

Is there something that she likes that you can get easier than she can? That's the type of thing I would look for.
