What a fun idea! And I laughed when I saw Glory's occupation! Glory is probably my fav pony and dinosaurs have always been my geeky interest Anyway - I could try and help you, but I don't have much first hand experience with most of these occupations though...
hehe, when I was a kid Parasol was a stay-at-home mom, Twilight was a teacher, Masquerade was in the circus and dancing butterflies was a dancer. I guess Windy was probably retired since I saw her a elderly.

Such a lovely project that I nonetheless don't want to commit to, as I'm not much of a writer I'd imagine Wind Whistler the logical pony was the aeronautics engineer, but if you mostly look at her symbol, yes, she could be an instructor in an alternate universe. And wow… I'll never look at Cherries Jubilee the same way again.
I really like Moondancer and Seashell's occupations! I think Moondancer is an independant midwife (the kind that helps you through a home birth) and Seashell lives in a beautiful "shabby chic" beach house that is often featured in country living Its funny you say that about CJ, because I have long thought she was a pole dancer! Poor CJ. x

Plus Aeronautics Engineers have to consider safety so a whistle would fit that too. Thankyou!
