On ebay she went for roughly ~£100. I feel that was a little on the low side for her, but she's only worth what someone will pay

She'll have gone for that so people could check she was genuine and not someone's hashed-together-from-the-attic creation.

I wonder what the oddball Princess ponies came with! They had different heads and symbols and all sorts, like this girl, maybe they were all dolled up with accessories as well!

Not necessarily. I was confident she was the real deal, but at the moment I can't justify spending large amounts of ponies that don't fit my collection criteria. We've see loose flutters like this one before, and the Princess and Happy Tail variants also come in mish mash boxes and random accessories at times, so it wasn't a huge stretch. I think there was a thread in Nirvana at the time where we discussed them as well.
