I had never tried scrapple until a few years ago.
Growing up, my dad loved this stuff. When I was very young, I asked him what it was. He told me "all the bad parts of a pig."

After learning that I had never tried it, a friend told me I must try it before passing judgement. I took a small bite and was hooked.
So, what's in it?
Offal - in this case, pig offal: head, heart, liver, etc. All the lovely bits! The organ meat is boiled to make a broth.
The broth is then mixed with cornmeal and various seasonings. Any meat is chopped up and mixed back into the cornmeal/offal mush. It's then formed into loaves, sliced, and cooked.
Mmmmm! Right?
I grabbed the packaging out of the fridge and it reads: pork and beef stock, pork, wheat flour, beef, cornmeal, pork hearts (awww <3), salt, flavorings, autolyzed (huh?) yeast extract.
