I looove eating soup when it's dark and chilly outside. I also like trying new recipes. So could you share your favorite soup recipe with me?

To get you in the soup mood I'll share my favorite soup. I found this recipe at Chow for roasted butternut squash soup I think a year back. It's really foolproof and soooo yummy! A real comfort food.  :yummy: And this makes such a huge pot full of soup that it lasts for days. :lol:

I've tweaked the ingredients a bit though to fit my taste:

Instead of butter I often use walnut oil.
Instead of Granny Smith apple I use one huge Jonagold apple.
Instead of yellow onion I use shallots, about 3 bigger ones to 5 smaller ones. :)
Instead of sage leaves I season my soup with a pinch of ground ginger, ground clove and ground nutmeg.
Instead of heavy cream I use creme fraiche (or sour creme). This gives the soup a nice pinch of acidity and also makes it creamy.

I'm not a huge fan of soup, I generally just eat gulasch on can or meat soup which is a huge old classic in Sweden. It's made of stock, meat in chunks with carrots, potatoes, onions and peas and other stuff. It's really good and easy to do. Just put in as much as you feel like of each. :)

I make a nice creamy mushroom stew when the weather gets cold here in Canada. I mainly play it by ear for how the recipe goes

CottonTALE's 5-mushroom stew
------------------
2 cups of white mushrooms (chopped)
1 medium onion (chopped)
1 tablespoon of chopped garlic
2 packages of enoki mushrooms
2 cups of brown button-cell mushrooms (chopped)
2 cups of shitake mushrooms (chopped)
2 cups of king oyster mushrooms (chopped into small pieces)
Milk
Cream
salt and pepper (to taste)

1. Place all of your mushrooms, garlic and onion in a pan to fry with a bit of oil. Once cooked, transfer to a soup-pot
2. Add in cream and milk to soup pot with mushrooms and simmer over medium heat. Add salt and pepper
3. Enjoy!

I don't really like soup that much but I do like Pastina when its really cold out.  Its something Nonna would make for us when we came over and would be one of the only things wed eat there as kids :)

Its pretty much just stock of any type (typically mushroom for me.  Alternatively, just use water and salt to taste) and those tiny star shaped pasta.  Cook the pasta in the broth or water until cooked but make sure the water ratio is greater then that if you would be making pasta normally.

Pour into a bowl, water/broth and all.  Top with parmesan cheese and a bit of olive oil :)

ETA: Goulash is pretty easy to make too.  I unfortunately don't like it very much because that was something my other grandmother would constantly make (She was German) so I cant give you a recipie there.  She used a lot of Maggi and pepper and I just to this day am a bit >< about it.

Im sure you would like it though if you had it..its pretty much just beef stew with big chunks of celery, onion and carrot <3

CottonTALE, that mushroom soup sounds amazing!  My mom makes a stellar potato soup that I've never had a chance to try to make on my own.  I'm another soup fanatic, but my husband doesn't typically care for it, and I can't eat an entire batch of soup by myself before it goes bad, lol!  One of these days, I'm also going to teach myself how to make miso soup, but we've got painfully few options as far as Asian markets go around where I live, so some of the ingredients have been evading me.

ETA: I'll see if I can find the potato soup recipe and post it here this afternoon/evening :)

I love soup. I could eat it daily. Do I have any good recipes? Not really. I take whatever we've got for veggies in the house throw in some rice and veggie bouillon cubes and let it simmer for a few hours... Then if I'm feeling kind of adventurous I take the hand blender and liquify it all together... mmm mush.

Soup is my favourite thing ever.  I will make it out of whatever I have around.  I usually don't use recipes.  I like to make Pumkin soup most of all, for that I use a pumpkin, about half as much potato as pumpkin, and onion, a few garlic cloves, then cooked in stock, and then blended with cream.  Yummy.

There is a mushroom soup I looooove too.  But alas the book the recipe is in is back in Australia and I don't know the recipe off the top of my head.

SOUP SEASON!!! :) To be fair I feel I can justify soup from about September to May so I am good to rock as of tomorrow. And have a nice pot of broccoli soup on the stove right now! I love having a nice soup at lunch at work makes the day cosier.

Cotton's mushroom soup sounds yummy! Maybe this fall I'll get a grip of myself and go pick some forest mushrooms to try something like that. :cool:

Another favorite of mine is a chicken and prawn with coconut soup. The trick is to add a can of coconut milk, a handful of peeled prawns and a good dollop of red curry paste to your everyday chicken soup, brings it up to a whole new level! :P

I have a great recipe for potato soup, actually made it a couple of weeks ago! Also have a good cabbage roll soup, and a buffalo chicken soup! Mmmm, I could use some of that soup right now actually!

This is my favorite soup!  Delicious!  Unfortunately I lost my recipe when I moved.  :(  But there are bound to be many on the internet.  Hmm, I think it involved 2 potatoes, 3 leeks, a bunch of cream and butter...ha ha, that is why it tasted so good right there XD

Also, Buffalo chicken soup!?  That sounds amazing  :cool:  Do you have a recipe?
