According to Lauren Faust, Celestia did start out as a full-blown queen. I've read that Hasbro/Studio B changed her to "Princess" because of Disney. Disney always portrayed princesses as kind and beautiful, while queens were snobby and evil. Of course, the only example of this concept that I can think of is the Snow White movie...
Empress would have been cool too though. Made me think of the Child like empress from neverending story.
That reasoning always disappointed me--FiM has done a great job of bucking stereotypes and cliches. Blowing raspberries at the "evil queen" cliche would have been right up the alley for this show!
You're right. It'd be awesome if they started calling her "Queen Celestia" in season 3 and acted like, "Princess Celestia? She's always been a queen. You just need to pay more attention to the show. "
