I had a red bell pepper stuffed with tuna, covered with almonds, salsa and Monterey Jack cheese - baked in the oven. For dinner, I will roast a chicken leg/thigh and have steamed zucchini and asparagus. Covered with butter. Oh yeah. Butter.
