Joy of Cooking has this Vegetarian cookbook: http://www.amazon.com/Joy-Cooking-All-About-Vegetarian/dp/0743202090
That has the Falafel recipe and so many other great things I make all the time now! I highly recommend it.

Oh oh! Cuddlebuggy! I have to try the lentils and tofu taco recipe! Sounds so yummy!

Easy peasy ovo-vegetarian bean "beefs":

1 can chick peas
1 can beans of choice (I usually take 50/50 big white beans and kidney Beans)
MASH or use a blender
mix with 1 egg (use no-egg to make it vegan) and psyllium seed (fiberhusk if you're in sweden)
garlic, parsley, fennel (ground), salp, pepper and possibly some cumin. (and anything else you'd like to season with)
Bake in the oven at 225C for about 15min.

Best served with a tomato salad and a yoghurt/soyghurt and herbs sauce. (I usually have garlic, salt, pepper, basil and a pinch of curry in it).
