I'm surprised that Staples would print such a thing, given that MLP is a trademarked and licensed property!

I'm pretty sure they'd be fine with one or two copies, but if you were to print a bunch it would look like you were selling them. Plus, it's fan drawn/made so its not that different than printing out fan art. Generally that becomes an issue when the artist gets upset, but he gave permission to get it printed so you should be all clear

The DA page clearly says he traced them from television. If they were his own design it wouldn't even be an issue. But they're clearly drawn to appear as if they are Lauren Faust's character designs. Even more importantly, Benton Publishing Industries holds the licensing rights to the coloring books - this is stepping on toes of a legal property that already exists.
