Mkay, so I'm housebound until Tuesday and as some Arena folk know, I adore baking.. :happy: So that's my plan for the weekend! I've got some friends coming over to help, and we need ideas.. :)

I'd love to try some new recipes so could you guys share your faves with me? ^.^

Ingredients I currently have (bc I can't go out to get other things!!):
Plain flour
Self Raising flour (+ baking soda)
Stork baking butter
Caster sugar (lots of it!)
Brown sugar
Vanilla, almond and lemon extracts
Eggs (+ milk)
Chocolate chips
Flavoured raisins (lemon and cherry)
Honey, Golden Syrup, Jam (loads of them), Marshmallow fluff and Peanut Butter
Icing stuff (icing sugar, sprinkles, sugar stars, pink food colouring)
I've probably got oats somewhere too

We've probably got chocolate somewhere I can melt down if need be as well.. I won't be eating this stuff myself, but I'll share it among my friends and family. ^.^

..I've also got a Dora the Explorer packet mix bc I'm such a mature 16 year old. :silly: :lmao: :lmao:

If you've got oats, you've got everything you need for oatmeal raisin cookies!

This is a basic recipe ... I veganize this for myself with soy milk, shortening, and egg replacer.  :)  They're easy and so, so good.

OH ... and the maple extract you can replace with whatever extract you like (almond, vanilla)

Oo I found this yummy-sounding recipe on MFP for really, *really* low cal chocolate mousse! I've not tried it out yet, but I probably will tomorrow :)

If you have bananas too (not sure if you didnt list them because they usually arent for baking), I assure you this will be the best bananabread you will ever put into your mouth.

This cookie is really popular every time my mom or I make it. They are pretty simple to make too and so yummy. It's one of those kinda of cookies where you just cant stop eating them.

I don't remember where I found this recipe for chocolate mascarpone brownies, but I do know that they're awesome. I did some tweaking to the original to make them less lethal because oh god, the amount of chocolate the original recipe called for was insane.

Ingredients;
For the brownies:
1 cup unsaltaed butter
4oz semi-sweet chocolate (chopped)
1.25 cups of sugar
.5 cups of mascarpone cheese (soften first)
3 eggs
2 teaspoons of vanilla
Half a cup of flour
Quarter teaspoon of salt
For the ganache:
4.5 ounces of semi sweet chocolate
6 tablespoons of whipping cream
2 tablespoons of butter

Melt the butter in a saucepan, add chocolate and let the warm better melt the chocolate. Add the cocoa powder, then add the sugar and salt, mix it, a lot. In another bowl add the eggs, vanilla extract, mascarpone, and mix it all together. Combine the bowls, add the flour, mix well. Line a baking sheet with some sort of parchment, coat it some no-stick spray, add the mix, and bake it for about 40-45 minutes. For me, this fills a 9x9 tray just dandy.

For the ganache, simmer the cream, pour over the chocolate (chop it finely, again), mix it till the chocolate's melted, then add in the butter. Top the brownies with the ganache, and yay.

They are pretty freakin' awesome, but a half inch by half inch square is enough for one person. They are freakin' loaded with chocolate.

I have a recipe for Smores Cupcakes.. You may or may not have everything needed, judging by your list.

S’mores Cupcakes

1 ½ Cups graham cracker crumbs (About 15 whole crackers)
½ Cup all purpose flour
2 ½ Teaspoons Baking Powder
½ Cup (1 stick) unsalted butter, room temperature
¾ Cups sugar
2 Large eggs
1 Teaspoon Vanilla Extract
¾ Cup milk
8 Oz Bittersweet Chocolate, chopped. (Do not exceed 61% Cacao) (*The recipe originally calls for bittersweet, but unless you are a fan of dark chocolate, you really ought to use milk chocolate for a true smores flavor)
½ Cup (Scant) heavy whipping cream
¾ Cup Plus 1 7oz Jar Marshmallow Cream
Nonstick Vegetable Oil Spray
12 1 inch broken graham crackers for garnish

Preheat oven to 350. Line 12 standard muffin cups with paper liners.

Whisk graham crumbs, flour, baking powder, and pinch of salt in a medium bowl

Beat butter and sugar in a large bowl until light and fluffy. Add eggs 1 at a time, beating to blend between additions. Beat in vanilla.

Add Graham cracker mixture in 3 additions alternately with milk in 2 additions.
Graham, Milk, Graham, Milk, Graham.

Divide batter among muffin cups. Bake 20 - 22 minutes. Cool completely.

To make chocolate ganache: Place chocolate in medium bowl. Bring cream to a boil in small sauce pan; pour over chocolate. Let stand 1 minute. Still till smooth. Cool till lukewarm.

Make a small hole about 1 inch in the top of each cupcake. Fill with Marshmallow cream. Ice cupcakes with chocolate ganache.

Preheat Broiler. Coat rimmed baking sheet with nonstick spray. Spoon dallops of marshmallow cream on sheet. Not too large. They spread. Broil till brown. Spoon over each cupcake and garnish with graham cracker.

Chocolate Ravioli Hearts.  I made them for Valentine's Day and they were amazing!  Preparation took a long time, but the result was absolutely delicious with some raspberry syrup on top.
