Mine usually take at least 2-3 thinnish coats before they start to look decent.

It really depends on the paint you're using, and what color you're covering with what color.  I did white  over blue once... took me about seven coats!

Persevere without thick coats!  Even if it takes you longer, more thinner coats is best.  I was doing dark blue over pink once, and the blue was ridiculously transparent.  I probably had at least 10 coats in some areas!

Are you using a brush or a sponge?  I suggest a sponge (makeup sponge preferably) if you're having trouble getting it even.  And yes, thin coats are always better.  Thick may cover faster, but it's going to look awful even when it's all covered.

Your paint won't be even if you try to just put a few thick coats on. Repaints take patience ^_^ Use very thin coats of paint and let them dry completely before painting a new layer. It can take many, many layers, but it gets a better result

I can only echo that thin is best, no matter how many coats it takes!  I've had some ponies that I swear I had to do 12 coats on to get it nice and even.

I am fond of testors brand paints. You can find them in hobby shops for painting minis and such. Expensive but it goes on so smooth. I use a brush and paint very thIn coats. They dry fast. Even if it looks uneven, like thicker in some places, jus keep adding coats till it is a solid shade. Just make sure to dry completely between coats or you will scrape off previous coats.

The last custom I attempted, I had 5 coats of thin white over yellow, and it already looks uneven :/. I tried sanding it and it ended up rubbing away the paint in parts. I feel your pain...
