My roommate picked up the box of the 35th anniversary pony I bought and was trying to figure out who the illustrator was. Does anybody know or was it just some random person that wasn't publicly credited?
I believe most of the G1 era art was produced 'in house', so it'd be someone on the Hasbro payroll. I've never seen any direct attributions for artists though, outside of the storybooks (and my memory may be failing there too, I know not all of them have a listed illustrator.)

It's unfortunate but not surprising, thanks for all the replies!
and One of the artists who was responsible for the SHS and some later playsets, her name is known and she came to the MLPFair a few years back....please someone who has had more coffee than I, please find the link with the pictures from her booth!
