Unfortunately she is one of those colours that is prone to bad discolouration. It does depend what has caused the yellowing (why she is green). I would give sunfading a shot - it may fix the problem, it also may not. But its certainly worth a go. Its really the only thing known to make a difference in cases like this.

She's one of those scented ponies right? for what I have read they are prone to discolor because of the scented stuff

A lot of ponies have scent in their plastic...in fact all MLP have something added to their base plastic to remove or cover the normal smell of plastic...but only a few of them have a tendency to discolour like this. Most ponies yellow over time due to the oil on the surface causing issues. But its most notable with certain colours.
Thank you Matcha for my gorgeous Baby Fifi avi

She's gorgeous! I definitely think the perfume they used to scent the ponies with causes discoloration over the years! Take cherry treats, raspberry jam, and bosenberry pie for example! Also I think of caramel crunch, mint dreams, molasses, dainty dahlia, daisey sweet and lavender lace! All fragranced and prone to discoloration!

She's pretty! Embrace her green-ness and if you decide to rehair perhaps choose a color that would match her green body, that's what I'd do. Greenberry basket, cute!
