GF Baking round 2

Ok, got in touch with my inner chemist today. My husband and I got tired of paying $5 a pound for GF Bisquick. It is really good stuff for making pancakes and biscuits, so I decided to investigate making our own. I look at the ingredients on the box and figured that most of these are easily obtained, it is just mixing the right quantities. So worked on pancakes this AM and this is what my husband said tasted the best:

Elish2's Bisquick Mix:
1 cup Rice Flour
1 Tbs Potato Flour
1/2 tsp baking powder
1/8 cup sugar
¼ tsp salt
½ tsp xantham gum

Viola! Make it per the GF Bisquick Recipe! (add 1 egg, 1 cup milk, 2 Tbsp vegetable oil)

Ooo I'll have to keep that in mind.  I love using bisquik to make sausage balls but I don't always have the stuff on hand.

That looks like something I could potentially try :)

you can find Xantham gum in most groceries stores where they keep Gluten Free baking products, or you can find it online. It is pretty pricey for a bag, but considering that you would only use a tsp in most recipes....it works out for the price.

Xantham gum should be with the GF baking products in larger super markets :) it used to be impossible to get hold of.

It isn't really necessary for GF baking, but it is said to help improve the crumb texture :)

I have a tub of it, but I have not used it yet.

I bought xantham gum through this company that specializes in stock prepping for long term out of Utah. I bought it 2 years ago and are still have not run out...

and like pinkkitty said it is not absolutely necessary, it helps to hold the baked good together better, but if you use too much it can make the item taste very gummy...
