OK, my husband is Gluten intolerant, and let me tell you, for someone who loves to bake, this made things rough. I have figured out how to make GF brownies, cookies, pie crusts, pizza crust etc pretty well, but the thing that eluded me was bread. Every time I made GF bread it was heavy, and very dense. If it started off soft, it became as hard as a rock by the next morning. We bought GF bread in the store and it tastes eh...not that great. My husband refused to buy it because it just wasn't worth it for a halfway decent loaf of expensive bread.

But now....I have found it! The grail of GF bread recipes!!! I came across this and had to try it, so I made it tonight, and oh my word...this bread has the texture and taste of regular wheat based flour bread!! I am so excited that I just have to share with all you gals/guys that I know are Gluten Free!

If you are right, I love you! Hubby is GF recently now too and he misses bread like crazy! If you'd be willing to share the pizza crust recipe I'd love you for that too!

Pizza Crust

1 (.25 ounce) package active dry yeast
 1 teaspoon white sugar
 1 cup warm water (110 degrees F/45 degrees C)
 2 1/2 cups GF flour
 1/2 tsp Xantham gum
 2 tablespoons olive oil
 1 teaspoon salt

Directions

Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
Stir in flour, xantham gum, salt and oil. Beat until smooth. Let rest for 5 minutes.
Turn dough out onto a lightly greased pizza pan or baker's peel dusted with cornmeal. Spread out dough across pan, (you can use water on your finger tips to spread it or use ziplock sandwich bags over you hand to spread out the dough). Spread with desired toppings and bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.
