I'd never have thought of adding a courgette to a chocolate cake but then again people eat carrot cake (though I've never been a fan)

Oh lol, the randomness :) I so adore zucchinis. An american friend once made these zucchini muffins, never found that recipe.

I have a recipe for zucchini chocolate cake, if you'd like me to send it.  It's not oversweetened like most American cakes, either.

Oh yes please! Share the zucchini love! Just checked on my plants and there's one tiny zucchini growing there! The pumpkins are a bit much this year :p

You know what, I'll share it with everybody. :)  (OMG, for some reason I thought it was a from-scratch recipe.  Instead it uses cake mix.  Someday I'll have to fix that.)

Zucchini fans and chocolate addicts, rejoice! :cuke:

Chocolate Zucchini Cake

1 package devil's food cake mix
2 cups shredded zucchini
3 large eggs
1/2 cup buttermilk
1/2 cup vegetable oil
1 tsp. cinnamon
1/4 tsp. allspice

Preheat oven to 350 degrees.  Grease and flour 13x9 inch baking pan.  Combine all cake ingredients in large mixer bowl.  Blend at low speed; increase speed to high and beat 2 min.  Pour batter evenly into prepared pan.

Bake 35 to 40 minutes, until toothpick inserted into center comes out clean.  Cool in pan 15 min; invert and cool.

Icing:
8 oz. cream cheese, soft
1 stick butter, melted
1 box powdered sugar
2 tsp. vanilla

Mix cheese, sugar, butter.  Add vanilla and spread.

Well I tried the recipe, well kinda :p Did my own thing with it. Batter tasted good, cake tasted good but I'm pretty sure I screwed up the icing. Will have to talk to a friend how she adjusts the US recipes to our ingredients.
It would be great if it actually said how much is actually in a packet of powdered sugar and a stick of butter. (we don't do the butter sticks here, only for garlic/herb butter)

Will taste later on, need some comfort food!
