I had to have three wisdom teeth taken out last year. The surgery wasn't too bad but as soon as the numbness wore off, it hurt a lot. Depending on how well she handles pain and if she recovers quickly, she may be layed up in bed or on the couch for at least 2 or 3 days but will feel much more normal after 5 to 7 days. Be sure she doesn't drink with a straw, as there's a chance the clot in the wound could come out and that could cause issues. Also, no gargling or swishing of any liquids. I'm sure the doctor will tell you this too. 
Soft foods like pudding, jello and mashed potatoes will be easiest for her to eat. As she heals up, she can move up to things like scrambled eggs and soups. The most important things are to be sure to keep brushing her teeth like normal and to take it easy. Hope everything goes well!
