Between the toys, merchandise and cartoon I'd say the ones that people know who don't collet are Applejack, Cotton Candy, Firefly, Whizzer and Gusty. Family and friends all recognize those, many of which knew those ones before they knew I collected them.
The ones I consider the most iconic would be Firefly, Gusty, Whizzer, Fizzy and Wind Whistler. Mainly due to the cartoon. They all made a lasting impression for one reason or another.

I've opened every one I've bought. Toys are playthings, not paintings.
Been doing that myself now. Honestly loving having them out. Do appreciate that they have a hoof that has Basic Fun stamped on the underside. Zero chance of being able to mix them up with original ones that way. I have all my ponies unboxed now. I swear my pony room is even more super-scented. It smells mainly like pancakes and maple syrup even if its just supposed to be vanilla lol
YES! It's funny how much the pony room has a pancake and maple syrup smell wafting around in there now. Didn't expect that. Nice that the smell is lessening some though because gracious was it overpowering at first. My allergies were not amused by it.

Recently found Surprise, which was unexpected. I've been eyeing her though because that hair color and the possibility of staining. Likely will end up unboxing her because of that. But it got me wondering as to what you all are doing with yours. Are you keeping them in their boxes? Opening them to display / photograph? A mix of the two depending upon the pony?

Yes! Coconut Grove. She drove my allergies bonkers. Itchy, water eyes always happened after picking her up.
Have heard of others who were bothered by one or more of the scented G3 ponies specifically. Which pony is it you are having this issue with? Did the pony come from a home with cats? I hope you can figure out why this one is bothering you.

Sugarberry - Adore her symbol. She’s so summery looking. That lovely hair. ❤️ Night Glider - Gorgeous! Her colors are so pleasing to the eye. Scoops - There’s just something about her I really like. Dancing Butterflies - Yellow! Much love. Her symbol is perfect. I can’t not look at this girl without thinking of my grandma. Yum Yum - Pretty with pink or faded white hair. I love how holiday-ish her colors make her. Merriweather - She seems like a very cheerful pony. Very much like her design.

Hands down yellow. <3 So cheerful and warm. They always make me smile. Purple and the more vibrant / neon ones follow closely behind yellow ponies.

Backgrounds not something I've gotten into, yet. Just take pictures wherever that I think looks good. Lot of outdoor pictures as those are some of my favorites to take. For props I love using Littlest Pet Shop, Shopkins, World's Smallest, Strawberry Shortcake pets, Calico Critters, anything that is in the size scale for Ever After and Monster High Dolls or Barbie. Can find some cute play foods that way. While kind of 'big' I do like using Squishables micros as they are like giant plushies for the ponies. Games (board or cards) ... both normal size and miniature can be a lot of fun. Miniature tea sets are love! There are so many amazing miniatures out there that work wonderfully for the ponies.

Princess Rinse 'n Spit, oh heavens. Her face is fabulous. Would love to find one someday. Close second would be the concerned ponies. They also have great faces. Poor dears keep ending up out in the snow. So not fans of it!
