I never tried that but I was thinking about it today. Because I've checked the g2 Sweet Berry that I have and she does have cut hair so I though if I could reuse her somehow. This one does have a screw in the back but I'm unsure if that would allow you to open the head.
I'm unsure which one you have but since most McDonald's toys are made of hard plastic so maybe threating it as a Barbie horse or a Dream Beauty would work http://www.mlppreservationproject.com/misc#DreamBeauties https://www.youtube.com/watch?v=BYElWcNtcMo
If it's more soft maybe just putting it in hot water and removing it like a normal pony head would work. Now that I've looked at some photos of g3 McDonald's ponies it looks like it could work but since I only own the hard plastic ones I'm not 100%sure.

If you are rehairing the G3 MD ponies, you can simply treat them as any other G3. :) I love them for that!

just a regular ol' exacto blade should be a perfect guillotine for them
