It's interesting to see what everyone says

A few came to mind for me:  Mimic, Ice Crystal, and Greek Ladybird

After a long time and eventually lots of $, I managed these....Greek Ladybird a MAGNIFICENT custom fro the fabulous PKW) they were certainly hard to get and expensive at the time - but NOW I think the Alternate Birthflowers are (for me) the hardest to find/get!

Princess Taffeta! She is very popular I think...certainly seems to be the favourite of many in that set - understandable she is gorgeous!

Quite a few, some that have already been mentioned but I think as the 'most wanted' by most people I'd probably say Ice Crystal.

I'd say Nightlight. It took me ages to finally get her, and she seems to be in everyone's wishlist or favorites. I think it is the unique shade of blue.
