Customizing big plastic horses?

I found this gal at a thrift shop really cheap, and I'd love to customize her. I just... have no idea how to do it... any tips?

I've seen a tutorial on rehairing these kinds of ponies before, but I'm not having much luck finding it.  I'll look again later; in the meantime, hopefully someone else has an answer!
