How to you tame the beast known as "pony hair"?

I am currently working on four G4 customs that require a little extra spunk to their hair than just letting it lay flat, but I can't get pony hair to do anything but curl >.>
 
The main thing I would LOVE to do with some of these customs are the wraps around the pins that you stick in their head, but when I try the hair just unwinds and wont stay put. How do you guys do it? I've looked through some tutorials but I'm either missing something important or I just don't have the magic touch.

Someone linked to this tutorial a while back that I found useful (not sure who it belongs to, forgive me >.<).  It may also help to find a bait and just practice.  Sometimes it takes me a while to get it right, but I'm still learning too.
