So the best I could become is a pescatarian.
That's what I am, although I find I'm eating less and less fish too. I've had a can of salmon in the pantry for a couple of months now. It used to be that I could eat a can a week! I do eat a lot of vegan food too and I love tofu!
I have a simple black bean "burger" recipe that's vegan. It's delicious and very filling
-1/2 medium sized onion, chopped and cooked (or more or less depending on how much you like onion)
-1 can of black beans, drained and rinsed (I have also made these with black-eyed peas and pinto beans, but the black beans were much tastier)
-1/2 cup of flour
-1 tsp garlic powder
-1 tsp onion powder
-1/2 tsp seasoned salt
-oil to coat the pan
Mash the beans, I use a potato masher on a cutting board. Add the flour and other ingredients. Mix into a dough. Form into patties and fry until crispy! Easy.
I get about 5 or 6 patties out of one can depending on how big I make them. I like to serve them on some lettuce with tomato and avocado, yum. They're even good cold out of the fridge!
