I just finished baking cookies and well, the recipe asked for 3/4 cup. and that's a buttload and I'm a diabetic and I'm trying to keep the diabetes under control... and here I am 10 minutes later with several biscuits devoured.

Is there anything I can replace the sugar with or just not put it in at all (like fake sugar, will that work? Don't suggest splenda, cardboard soaked in seawater is sweeter than that rubbish >__>; )  D:

I've made cookies and cakes before with 'fake sugar' mine turned out okay. Sweetners will work too.

oh good, because i can feel my teeth rotting as I bitintothem. it was just... sugar. is it possible to add little? or even a quater of the amount required?

Stevia extract works great. Just don't get the dry shredded green stuff. That is for putting in with tea and coffee. It comes in powder form and liquid form. If you want to measure it in measuring cups you would want the powder. It also comes in a liquid form that is much stronger and takes less.

Yay, I have names for sugar substitutes... But. Do I actually have to add so much sugar? almost a cup seems like alot to me. My other question is- do I actually have to add sugar to it? is it just to sweeten it and nothing more?

I've heard that Truvia is pretty good. Although, if the cookies have wheat, the wheat will give a bigger blood spike than a couple teaspoons of sugar. Good luck with the substitutes!

I've been cutting back on sugar by half and more with no substitutes without problem when I'm baking. Sometimes I add a little more of something else, like two teaspoons of cacao instead of one when I reduce the sugar, but it's just because I really love dark chocolate.

In most recipes you should be able to cut right back on the sugar without a problem. A little goes a long way.

You can also cut down the sugar itself'.  To like 1/2 a cup or even less.  A lot of cookies call for too much sugar as it is.

Have you ever tried agave nectar?  It's lower on the glycemic index than sugar and you can get away with using less.

If you're going to try to substitute other sweeteners for sugar, I suggest looking for sugar-free recipes and specific substitution directions. The amount of sugar or other sweetener often needs to be different in order for the dough to bake properly or have a good texture, so you generally can't just leave out the sugar or swap 1 cup of sugar for one cup of something else.

Also, the sugar itself does more than just add flavor, it changes the texture of whatever it is your baking (and if it has yeast, the sugar basically feeds the yeast). Without sugar or some kind of substitute, cookies can come out hard and dry.

ARGH DANG IT! what else will keep them nice? because 1 cup of sugar was just... terrible. I was hoping to make myself some nice biscuits once a week instead of  spending ages in the store reading the sugar content of all the biscuits and what not. I thought something home made would be healthier.

If you just google "Sugar free cookie recipe", you should be able to find some helpful alternatives.
