I've made cookies and cakes before with 'fake sugar' mine turned out okay. Sweetners will work too.
I wouldn't know what to do but I'm a sugar addict so it doesn't bother me.
If you're going to try to substitute other sweeteners for sugar, I suggest looking for sugar-free recipes and specific substitution directions. The amount of sugar or other sweetener often needs to be different in order for the dough to bake properly or have a good texture, so you generally can't just leave out the sugar or swap 1 cup of sugar for one cup of something else.Also, the sugar itself does more than just add flavor, it changes the texture of whatever it is your baking (and if it has yeast, the sugar basically feeds the yeast). Without sugar or some kind of substitute, cookies can come out hard and dry.
