I was going to suggest that maybe they had intended for Celestia to be pink originally and then changed her to white at the last minute, and Hasbro toy producers didn't get the memo until it was too late, but I've found nothing to back up my guess.

to me I always thought it was like this. Celestia is pink in the show. like the lightest most totally white pink ever but still pink. So when the orders for toys came around they said "ok so the celestia doll should be a very light pink." and the toymakers just heard "pink" and ran with it. that's almost my reasoning behind all the other none-accurate colors. yeah I have no idea how business works.
