Whatcha Got Cookin?

It's chilly today. So I'm making chicken tortilla soup. It was good. Chicken, chicken broth, tortillas, salsa, onion, olive, cilantro, cheese, avocado, hot sauce and sour cream.  Next time, I'm not using canned olives, they had a tin taste.

I'm having tikka Masala with basmati rice. It's just chicken cut into dices, creme fraiche and a powdermix of Massala spices. Really delicious for not being entirely home made. I did add broccoli though.

I did a half-cheat, half-home-cooked tomato soup. Tinned tomatoes, veggie stock cubes, water, instant mash potato, dried onion, frozen carrots, dried mixed herbs. Cooked yesterday, eaten with garlic herb bread I baked from scratch two days ago. Made four portions so three are in the freezer. Will have to remember that two of the tins of tomatoes used in the soup were tomatoes, a few peppers (yummy), & CHILLI!!! So I made a SPICY tomato soup!!!
Today I made scones. Were good but slight aftertaste to them. I think I may have to cut the baking powder in half...
Note to recipes, PLEASE don't just say teaspoon!!! Say level teaspoon, rounded teaspoon, or heaped teaspoon, not just teaspoon!!! I've been burnt by this wi baking soda before, now it's baking powder!!! I need it more accurate please!!! At least my bread is only yeast so just a single packet does the whole thing

I made my broccoli cheese soup yesterday. I have lots of leftovers. It was very good! I should have gotten a big thing of broth though and not so much water. This was the second time making it. Next time I'll know to get more broth and a big carton of cream.

We're eating hamburgers today with bacon, baby spinach and pickled red onion :). Hubby's making them so I'm just sitting here waiting.

I made tomato bacon grilled cheese. Luckily I had nice sourdough bread in the freezer. I used American cheese, Baco Bits (not real bacon) and sliced tomatoes. It was sooooooooo good! I thought about making some tomato soup to go with it but I don't think my milk is good anymore and I don't like it mixed with water.

I think I was inspired by you guys, as I made broccoli cheddar soup earlier this week  :D I've never made it before but I had some leftover cheddar from another recipe so this was perfect.

I like cooking but I'm feeling super unmotivated this weekend. I should go grocery shopping. I think I'm going to make pumpkin (or squash) soup this evening. Or maybe sweet potato, I guess that would be more appropriate for the season.

I baked more bread!!! Garlic & Herb bread again as I love it!!! Had a fun idea to, once kneaded into submission, I'd portion it & shove it in the tins (greasing as I shoved it in), then the tins went in big boxes where they waited for the dough to rise, then would go straight into the air fryer. RESULT!!! So light & fluffy it was almost like eating air!!!
I also made broccoli cheese soup after baking the bread, with one portion going with half my bread!!!
