I don't watch much by way of live action TV shows (I prefer animated >u<) but here are a couple of my personal faves!
NBC's Hannibal: 3 Seasons, 39 Episodes. An intellectual masterpiece of a thriller, in my opinion. I am not someone who likes the newer horror genre, period. But I adored this show. It felt like something more out of Grimms' Fairy Tales than your typical serial killer show, and had a completely different vibe from the Anthony Hopkins movies, which I didn't enjoy at all (sorry Mr. Hopkins...you're a fantastic actor but...gosh, I could never stomach those movies). It has enough subtle humor and fantastical elements to give it some levity and keep it from being totally sickening. Also, just...Mads Mikkelsen and his amazing skill with micro-expressions. I will just put in a warning, however, that this show is extremely gory and not for the faint of heart.
Good Omens: 1 Season, 6 Episodes. Amazon Prime Original. My current obsession! A sort of satirical supernatural show about an angel and a demon, who happen to be best friends of 6000 years, trying to stop Armageddon so they can continue living on Earth. If you haven't read the book or at least have a basic understanding of it this one might be a bit difficult to get into, but oh my goodness, is it good. The series is fairly faithful to the book (since Neil Gaiman, one of the authors who wrote it, was directly involved with it), and David Tennant and Michael Sheen are fabulous in their roles as Crowley and Aziraphale, respectively. I loved this so much.
White Collar: 6 Seasons, 81 Episodes. This is a cute, pretty relaxed show about a con artist informant who, in exchange for getting out of jail on probation, agrees to work with the cop who captured him in order to help bring in other criminals. It's a lowkey show that really only ramps up the tension towards the end, but it's interesting, fun, and has a lot of neat, likable characters who have great chemistry. I enjoyed it a lot!
