 :lol: So my new house has chestnut trees, and I love chestnuts!

I have like ~5 gallons of them (with more falling from the trees daily). However. I was reading how they don't keep AT ALL. I'm so bummed.

Sooo... besides roasting (which I love  :drool: ) What else can I do with them?

Does anyone have some good recipes?

Not much personal experience, but I'm fairly sure they can be dried and used for flour?  We collected a handful, peeled them and left them on the kitchen counter, and they're now hard as a rock.  IIRC one got a mushy spot and got tossed, but the rest seem fine.  Using an oven to speed drying probably would have been smarter, but it was more of a curiosity thing.

Chestnuts don't have any gluten, so you'd have to add that or use them for recipes that don't require it.

I don't have the right equipment to make flour unfortunately.

I can't imagine flour being able to keep, when the nut won't keep?

ETA: o.o you peeled them but didn't cook them??

Yeah, we just left them out on the table.  They turned into rocks. Low humidity I guess?
Chestnuts spoil fast because of their high water content presumably, so taking out the water makes them much more shelf-stable.

^_^; Thanks, but as I mentioned I don't have the equipment for making flour. I need a $100 dry grains container for the vitamix. No coffee grinder or spice grinder in this house.

So far I figure I will try a dish where I simmer them with butter and cilantro.
And two kinds of Japanese rice/chestnut dishes. (One normal rice, one sticky rice)
I wanna try to make that paste that goes on mont blancs and do lil cupcakes.
