I think Waterfire from G3 is pretty unique! I mean, who thought of putting water and fire together, and with such a bold color scheme? Love it!

Princess Sparkle is a pony I always saw as very unique due to her being fully glitter covered and having the light up function in her crown. And she didnt have a symbol on her flank, instead it was on her cape.
Glow and show are also pretty unique with their slightly transparent plastic and the glow in the dark confetti in them. Plus they even got showcased in the show with one of them as an alicorn way before alicorns were popular!XD

For me, obviously the first that spring to mind are the SA ponies with their showerbutt tails.

WRT Colour:
Movie Star Shady is just so extremely neon and Princess Sparkle (from year ten) so... sparkly. I've always thought Princess Taffeta has a unique shade and lovely shade of blue. And of course - Snuzzle.

And finally, the pose: there are very few (unflocked) rearing ponies. I like rearing ponies so those such as Scandinavian Truly and Brazilian Milky Way and Magic Star are unique to me.

Not that I can think of! G4 has some brown blind bag ponies, and some more brown ponies in its cartoon, but in terms of regular ponies, as far as I know she's the only one!
