I already got Splosh's symbol from the Wikipedia page, so that'll be one out of the way.

What's the best way to do a template of the symbol because I'm not very good at making the symbol from scratch.

I guess it would depend on the shade of green you're looking for. Since green and red (pink) are complementary colors when they mix you get brown. Depending on the shade of green you're attempting probably anywhere between brown and green.

one thing you could do depending on your plans is sunfade the pink ponies until they're as light as you can get them and then dye them green

Pink under a transparent layer of pink equals brown.  You could end up with a tan pony or an army-green one.  I agree with the previous poster.  If you have to dye, then try and sunfade out as much of the pink as you can first.

It might be worth considering a full body paint job instead.

I too think they would end up turning brown.
