Recipes that use pumpkin puree

This year I decided to actually use my Halloween pumpkin for food as well as decoration.    I roasted the seeds with cinnamon sugar (yum!) and pureed the outer pumpkin.  But it was a big pumpkin so even after making pumpkin pie, pumpkin bread, and pumpkin bar cookies, I still have two or three cups of puree left!  Anyone have any pumpkin recipes that use puree?  (Otherwise I will just keep making pies, lol.)

I always eat my Halloween pumpkins! especially those little ones my daughter gets free at the pumpkin patch.

generally I just cut the whole thing up (little pumpkins or winter squash in 1/2, big pumpkins in sections) and I roast them with salt and peper and eat them as a vegetable side dish.

Since yours is already pureed, you could cook it in a pot with spices (I would go salt, pepper and maybe paprika?) and serve as a alternative to mashed potatoes!

can also substitute oil in brownies with pumpkin or apple sauce, it changes the texture and flavor a little.

I'll bet you could mix it with sugar and spices and bake it with a strudel topping for a hot pudding/cobbler sort of thing too.

It's actually a really tasty and healthy veggie, I'm glad to see someone else is appreciating them rather than just throwing them out after the holiday!

Can you use it in a soup~~ pumpkin soup is so tasty

This pumpkin soup is pretty good if you wanted to go savory.
It's got a decent amount of spices, but throwing a bunch of fresh chopped veggies on top is what's best. (either that or I am a sucker for cucumber & tomato pieces on practically everything)

I have a pumpkin torte recipe that is fantastic, I  actually used it as the base to all my cake type recipes these days and just substitue in other flavors for the pumpkin when needed. I'll post it when I find it

Was going to say--a soup is what came to mind.  You can also use it to add to things like risotto or a sauce for pasta

Thanks for all the suggestions, guys!  In the end I made . . . another pumpkin pie.    Because I just love pumpkin pie.  Mmm, it was good.
